PAIRING NOTES
Bacchus is a classic pairing for fresh goat’s cheese, herbaceous seasonal salads, braised fennel or grilled fish. Also perfect for a Saturday afternoon in the garden!
Tasting Note
Clear lemon gold with green hues. Poached pear, sweet lime, and elderflower cordial on the nose. A luscious and textured mouthfeel is balanced by a fresh acidity showing gooseberry fool, nectarine, and herbaceous nettle and mint on the palate.

Pressing: De-stemmed for a small amount of skin contact during pressing
Fermentation: Stainless steel fermentation, thiol aromatic yeast strain
Malo-lactic fermentation: Low diacetyl LAB, stopped before completion
Maturation: Stainless steel on fine lees
