Indulge in the luxurious sweetness and vibrant acidity of our three Ice Wines, made from fruit pressed when frozen to create rich, aromatic and velvety dessert wines.

 

Includes:
Apple Ice Wine – Tart apple and honeyed spice, with concentrated flavours of apple, apricot and spiced orange. Perfect with citrus desserts or soft cheeses.


Blueberry Ice Wine – Dark berries with hints of candied violet and rose petals. Velvety, pure, and balanced by refreshing acidity. Ideal with cheese boards, chocolate desserts, or as a digestif.


Pear Ice Wine – Amber gold with dried apricot, quince and hazelnuts. Honeyed and luscious, with vibrant acidity. Pairs beautifully with fruit cake or ewe’s milk cheeses.

Tasting Note

Clear lemon gold with green hues. Poached pear, sweet lime, and elderflower cordial on the nose. A luscious and textured mouthfeel is balanced by a fresh acidity showing gooseberry fool, nectarine, and herbaceous nettle and mint on the palate. 

Winemaking

Pressing: De-stemmed for a small amount of skin contact during pressing 
Fermentation: Stainless steel fermentation, thiol aromatic yeast strain 
Malo-lactic fermentation: Low diacetyl LAB, stopped before completion 
Maturation: Stainless steel on fine lees
